Pau

| 5.5g | Yeast |
| 100g | Castor sugar |
| 5g | Baking powder |
| 15g | Cocoa powder |
| 1 cap | Star Brand Vanilla Mocha Flavour |
| 20g | Shortening |
| 230ml | Water |
Filling
| 1 cap | Star Brand Vanilla Mocha Flavour |
| 150g | Dark chocolate coin |
| 100g | Meadow Fresh Whipping Cream |

| Melted dark chocolate |
Method
- Prepare the filling by double-boiling the chocolate, whipping cream, and mocha flavour until smooth. Chill until firm, then shape into 5g balls.
- To make the dough, mix the flour, yeast, sugar, salt, and baking powder on low speed for 1 minute. Add the water and mocha flavour, then knead for 1 minute.
- Add the shortening and knead on medium speed until well combined.
- Remove 50g of the plain dough. Add the cocoa powder to the remaining dough and continue kneading until fully developed. Knead the reserved plain dough by hand until soft and elastic.
- Weigh 15g of the chocolate dough and wrap it around one 5g filling ball. Weigh 2 pieces of 3g chocolate dough and place them on top to form the ears.
- Shape 1g of the plain dough into a ball and attach it as the nose. Place the bun on an individual piece of baking paper.
- Repeat with the remaining dough. Proof for 45 minutes, or until fully proofed.
- Steam over high heat for 10–12 minutes. Leave the lid closed for 1–2 minutes before opening.
- Decorate the eyes with melted chocolate.
