Ingredients
225g | Unsalted butter, at room temperature |
225g | Caster sugar |
4 | Eggs, grade A |
225g | Blue Key Self-Raising Flour |
1 tsp | Baking powder |
100g | Desiccated coconut |
1 tsp | Star Brand Apple Green Colour |
400g | Kaya |
Method
- Preheat oven to 180°C.
- Beat butter and caster sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add Blue Key Self-Raising Flour and baking powder. Beat until just combined.
- Line an 8-inch cake pan with parchment paper and pour the cake batter into prepared cake pan and bake for 30 minutes or until a toothpick comes out clean when inserted into the centre.
- Remove cake from the pan and allow cake to cool completely on a wire rack before assembling.
- For the desiccated coconut topping, divide desiccated coconut into two portions. Set aside one portion and leave it plain. To the other portion, add Star Brand Apple Green Colour and mix well.
- Once the cake has completely cooled down, cut it horizontally into three layers.
- Spread the first layer of cake with kaya and spread it right to the edge. Add the next layer of cake and repeat.
- For the top layer, spread a generous layer of kaya and decorate with desiccated coconut.
