Ingredients
Durian filling
| 60g | Non-dairy whipping cream |
| 1/8 tsp | Salt |
| 2 tbsp | Icing sugar |
| ¼ tsp | Star Brand Vanilla Flavour |
| 200g | Fresh durian flesh (mashed) |
Donuts
| 100ml | Warm water |
| 1 ½ tsp | Instant yeast |
| 150ml | V-Soy Original Soya Bean Milk |
| 50g | Caster sugar |
| 1 | Egg (grade A, slightly beaten) |
| 60g | Unsalted butter (melted) |
| 450g | Blue Key Self-Raising Flour (sifted) |
| 1L | Seri Murni Pure Vegetable Oil |
Remarks
Chill filling for 30 mins, rest the dough for 30 mins.
Method
Durian filling
- In a mixing bowl, combine non-dairy whipping cream, salt, icing sugar, Star Brand Vanilla Flavour and fresh durian flesh. Beat well.
- Cover the bowl with cling film and chill in the fridge for a minimum 30 minutes.
Donuts
- In a bowl, combine warm water and instant yeast. Stir and set aside until the mixture forms bubbles.
- In a mixing bowl, combine the yeast mixture, V-Soy Original Soya Bean Milk, caster sugar, egg, unsalted butter and Blue Key Self-Raising Flour.
- Mix and knead until dough-like consistency and cover the bowl with a damp tea towel. Set aside until it doubles in size.
- Gently roll the dough out to 12mm thickness. Cut 12 portions with floured donut cutter and arrange on a tray lined with parchment paper. Cover the donuts with a damp tea towel and set aside until double in size.
- Heat Seri Murni Pure Vegetable Oil in a wok and deep-fry the donuts in batches until golden brown. Drain on wire rack or kitchen paper towel and allow donuts to cool completely.
- Fill chilled durian filling in a piping bag.
- Use knife to create a hole in one side of each donuts. This is where the pastry bag filled with durian filling will be inserted. Pipe in durian filling through the opening.
- Dust icing sugar on donuts.
